Rainy Day Tater Rounds

The restaurant at which I had lunch yesterday served fries with truffle oil and Himalayan pink salt. I didn't order any, but I was definitely inspired-- truffle oil and Himalayan salt are definitely two of my favorite cooking ingredients of late. I got the salt from the bulk bin at Whole Foods, and highly recommend it - not only for it's incredible taste, but for it's health benefits. Yes, salt can be good for you!

Today's dreary weather called for a little comfort food, and I just happened to have a bag of Ore-Ida "tater rounds" in the freezer. Toss in a little truffle oil (I use La Tourangelle) and pink salt and bake and you get the hands-down BEST tater tots you ever tasted. I mean holy moly. I ate about 20 of them in five minutes.

The salt and truffle oil are pricey, but once you invest in them, you can use them in a variety of dishes. The cost of the tots is negligible, so if you have the other ingredients in stock this becomes an easy, crazy affordable, craaaazy delicious indulgence.

Outta Site

Requisite 6-8 month blog update: I moved to a new house in March-- since that time, I've spent exactly four weekends in it. Needless to say, I still have some boxes to unpack. Thank God for attics. In the meantime, though, I've attended three weddings (two out of state, and the other as a bridesmaid to the ever-lovely Melissa), taken a road trip up the Pacific Coast Highway from San Diego to San Francisco (and subsequently decided moving to California is a most definite future happening), and have spent a fair amount of time in West Virginia, interestingly enough. I also turned 30, am 9/10ths of a way from refinishing a dresser, and have become rather immersed in vegan cooking. You know, in case you were wondering. Life is good, if fast. In my fantasy world, I'll blog again soon and often, with pictures and anecdotes and inspiration a-plenty, but for now I'll just leave you with a wink and a smile.
